Restaurant Style Fried Chicken Recipe

Ingredients

1 free-range chicken, cut into 8 pieces
1 tsp salt
1 tbsp chicken powder
1/2 tsp ground pepper
1/2 tsp seasoning, enough oil for frying

Seasoned Flour

1 kg medium-protein wheat flour, such as Blue Triangle
2 tbsp sago flour
6 grams baking soda
1 tsp salt
1 tsp chicken powder
1 tsp ground pepper
Dipping Seasoning
1 egg white
1 tbsp chicken powder
500 ml water

Methods

Place the chicken in a bowl, sprinkle with the seasoning, and set aside. Let it sit for 15 minutes to let the seasonings soak in.
Dipping Seasoning: Beat the egg white until frothy with a fork or whisk, add the chicken powder, stir well, and then pour in the water. Set aside.
Seasoned Flour: Mix all ingredients together and mix well.
Directions: Take 1 piece of chicken, roll it briefly in the seasoned flour, then dip it briefly in the seasoned batter. Remove and roll it again in the seasoned flour, compacting the flour into the chicken. Repeat for all the chicken.
Heat the oil and fry the chicken until golden brown and cooked through. Remove and drain.
